Easy Stuffed Shells

Happy Monday, friends!    It was a fun weekend over here, although it was pretty warm!    I'm ready for the fall weather to arrive--bring on the jeans and cozy sweaters and booties!   

I thought I'd share today one of the recipes I've made in the last few weeks.  Occasionally, my husband works later in the day, and it's just the kids and me for dinner.   They are still a little picky/messy when it comes to dinner time, so I always look on Pinterest for ideas for kid-friendly meals.  This recipe I just kinda made up myself, because the subject of stuffed shells came up at work one day.  There are many different varieties of ingredients you can put in your shells, but I wanted a saucy, meaty base.   

Ingredients
1 pound ground beef  (you could also use ground turkey or omit the meat all together)
1 jar of your fave pasta sauce (I used tomato basil sauce because it was on sale!)
1-8oz bag of your fave shredded cheese (I used parmesan, but mozzarella would also be delicious!)
1 package of shell pasta, whatever size you prefer

I also was a sneaky mom and added spinach to my sauce.  I got a bag at the store, did a rough chop on a handful of it, and stirred it into the sauce and let it wilt down.   The kids had no idea it was even in there!













Preheat your oven to 350 degrees.  Boil your pasta according to the directions on the box, drain, and let cool.  In the meantime, brown your ground beef and drain off any excess fat.  Add your pasta sauce and chopped spinach and cook until heated through.   Spoon your filling into the shells and place in an oven safe baking dish. *I bet adding ricotta cheese to your mixture would also be excellent!  Sprinkle the cheese over top of the shells.   Bake until the cheese is melted to your liking!

Easy peasy!   I served it with Texas Toast baked in the oven (I kept the shells in for the length it took to bake them).   You could also serve a nice salad or some veggies on the side!

    1. I think they would be good as a vegetarian option also! I’m gonna have to try some more spinach and cheese pasta recipes! We went to a wedding once where they actually had spinach and cheese crepes and they were soooo good!!! 😁😁
